Herbal Seasoning & Tasting Workshop

Join us for the Herbal Seasoning & Tasting Workshop at The Nook at Bigfork Bay on Friday, June 7th, from 5pm-6pm.

The Kitchen Apothecary Series: Herbal Seasoning & Tasting Workshop focuses on a combination of locally grown, savory herbs to create a flavorful Italian seasoning. This particular blend is an aromatic medley of dried basil, oregano, marjoram, parsley, thyme, rosemary, and garlic sourced from small-scale herb farms* in Montana. Each participant will blend a half pint of Italian seasoning, then learn how to apply it in various dishes through a brief cooking demonstration and taste testing.

What’s on the taste testing menu?

  • Antipasto Platter: an assortment of cured salami, prosciutto, cheese, green olives, cornichons, pickled peppers, artichoke hearts, and fermented garlic. Garnished with Italian seasoning and a variety of slow-infused olive oils (Italian seasoning, crushed red pepper, and fresh garlic)

  • Authentic Italian meatballs with marinara sauce and parmesan.

If you're interested in building your kitchen apothecary and indulging your culinary senses, we invite you to participate in the Kitchen Apothecary Series. Can’t make it to the workshop but need to stock your pantry? Locally grown and dried herbs are available for purchase by the ounce at Bee’s Knees Mercantile; herbal tea or seasoning blends may be customized to your taste and needs.

Garden Focaccia Workshop

Join us for the Garden Focaccia Workshop on Friday, June 14th, from 5pm-6pm, at The Nook at Bigfork Bay.

Bee’s Knees Mercantile is collaborating with The Wild Daisy to bring you the upcoming Garden Focaccia Workshop, an immersive culinary experience focusing on the combination of focaccia with fresh garden vegetables and herbs. 

Each participant begins with a pan of raw focaccia sourdough, then customizes with their choice of slow-infused olive oils (Italian seasoning, crushed red pepper, and fresh garlic), as well as a variety of fresh vegetables and herbs. Participants can take and bake the garden focaccia at the comfort of their homes or freeze until use. (Baking instructions will be provided during the workshop).

We invite you to join us around the table and indulge your culinary senses. Freshly baked focaccia and refreshments will be available during the workshop as you work your dough!

Kitchen Apothecary Series: Traditional Cookery Class

Join us for the Kitchen Apothecary Series: Traditional Cookery Class on Sunday, May 5th, from 12pm-3pm at the Ferndale Community Hall. The venue is located at 31875 S Ferndale Dr, Bigfork, MT 59911 (next door to County Line Coffee).

Local herbalist and owner of Bee’s Knees Mercantile, Kassie, has been invited to guide a Kitchen Apothecary Series to share original herbal seasoning blends and how to apply them in various dishes through live cooking demos. The series includes introductory herbal seasoning and tasting workshops, as well as traditional cookery classes.

The upcoming Traditional Cookery Class is an immersive culinary and dining experience that focuses on basic kitchen skills with an intuitive approach. Participants are invited to indulge in their culinary senses and assist in preparing a variety of dishes, including:

  • Herb goat cheese and crackers with herbal honey and fermented garlic

  • Microgreen salad with pickled beets and red onion, feta, walnuts, and vinaigrette

  • Pan seared, wild-caught Alaska salmon with herbal compound butter

  • Roasted sweet potatoes, tricolor carrots, and onions

  • Citrus upside-down cake

After the immersive cooking experience, participants will gather around the table to dine together in the spirit of community. Refreshments will also be available to sip on. Participants are encouraged to bring an apron!

Local herbalist and owner of Bee’s Knees Mercantile, Kassie Roedel, has been invited to guide a Kitchen Apothecary Series that focuses on herbal seasoning blends and how to apply them in various dishes through live cooking demonstrations and tastings. The series includes introductory herbal blending and tasting workshops, as well as traditional cookery classes throughout the year. 

We will begin the series with an Herbal Seasoning & Tasting Workshop that focuses on the combination of locally grown savory herbs, such as garlic, dill, sage, oregano, and winter savory. Participants will follow an original recipe to blend a half pint of herbal seasoning, then learn how to apply it towards various dishes through a mini cooking demonstration, followed by a taste testing.

Participants will taste the following dishes:

  • Herb goat cheese with crackers and herbal honey.

  • Pan seared halibut with herbal vinegar served with braised herb leeks and potatoes.

Fill your cup! Join us for the Herbal Tea & Honey Workshop on Wednesday, March 27th, from 6pm-8pm at The Nook at Bigfork Bay.

Local herbalist and owner of Bee’s Knees Mercantile, Kassie Roedel, has been invited to guide an evening Herbal Tea & Honey Workshop. This immersive focuses on the basics of herbal tea and herbal honey (aka electuary), a combination of locally grown botanicals and herbs, as well as ethically sourced spices. Participants will create two blends of loose-leaf herbal tea and a pint of electuary to help build your wellness apothecary. Workshop guide, Kassie, will be offering her expertise in regard to the herbal properties, as well as provide herbal medicine books for reference.

Taste testing is encouraged for participants to familiarize themselves with the herbs, and herbal tea will be available to sip on throughout the workshop. To make it a true tea party, we will have freshly baked rose -and- lavender iced shortbread cookies from local bakery, The Wild Daisy.

Lesser known, herbal honey or "electuary" is composed of equal parts honey and finely ground botanicals. Electuaries were traditionally used to preserve plant medicine, making a palatable cough syrup, or simply as a sweetener for tea. Both herbal tea and electuaries are antioxidant rich, which actively supports the immune system and is especially helpful for cold and flu season or to soothe sore throats.

This immersive workshop focuses on the basics of custom blended herbal tea and honey, a combination of locally grown botanicals and kitchen herbs, as well as spices. Participants will help process the ingredients and create two custom blends of loose-leaf tea (two ounces each), as well as a pint of herbal honey aka electuary. Workshop guide, Kassie, will be offering her expertise in regards to the herbal properties, as well as provide herbal medicine books for reference. Taste testing is encouraged throughout the workshop and herbal tea will be available for participants to sip on as they build their wellness apothecary in the spirit of community.

Vanilla Extract Workshop

Local herbalist and owner of Bee’s Knees Mercantile, Kassie Roedel, has been specially invited to guide the Vanilla Extract Workshop on Saturday, November 18th, from 1pm-2pm located at The Nook in Bigfork, Montana.

Vanilla extract is a common pantry staple, especially when homemade, that is equally tasty in savory and sweet dishes, as well as adds a hint of vanilla flavor in whipped cream, coffee, hot chocolate, etc. This immersive workshop focuses on the basics of Vanilla Extract preparation, a combination of vanilla beans and rum. Each participant will help process the ingredients and take home a pint jar of vanilla extract. We will also be offering baked goods along with your choice of either Uptown Hearth hot coffee or Front Porch Chocolate Sipping Chocolate with a dollop of Chantilly cream to sip on during the workshop.

Elderberry Syrup Workshop

Local herbalist and owner of Bee’s Knees Mercantile, Kassie Roedel, has been invited to guide the Elderberry Syrup Workshop on Saturday, November 18th, 10am-12pm located at The Nook in Bigfork, Montana.

Elderberry Syrup has been a mainstay in many households to help prevent the effects of cold and flu season during the cold months ahead and are packed with vitamins, minerals, antioxidants, amino acids, and fiber. Elderberries have been used in folk medicine for centuries.  Historically, humans have used elderberry to combat cold viruses, sinusitis, and influenza as well as a diuretic and laxative (when consuming increased amounts). In fact, elderberries are poisonous in their raw and natural state and must be cooked and appropriately prepared for safe human consumption.  That's why we always recommend sourcing your organic elderberry syrup from a licensed producer - like Montana Elderberry!

This immersive workshop focuses on the basics of Elderberry Syrup preparation using an Organic Elderberry Syrup Kit from Montana Elderberry (Bozeman, MT) , a combination of quercetin-rich organic European black elderberries, organic warming spices, and organic ginger root. Workshop guide, Kassie, will use an adapted recipe using additional warming spices, citrus, herbs, and roots for participants to create a more custom blend with the opportunity to concentrate the syrup into a batch of lozenges. Each participant will help process the individual ingredients and take home a pint jar of elderberry syrup, as well as a pre-made sample of elderberry syrup to taste-test. Organic Elderberry Tea from Montana Elderberry will be available to sip on during the workshop.

Fermented Honey Garlic has been used over the years as a traditional herbal remedy or antiviral, packed with antioxidant rich compounds and bioactive components that help boost the immune system whilst stimulating digestion and reducing inflammation. Fermented Garlic Honey may also be used to soothe sore throats and ease the effects of cough and cold symptoms if you find yourself under the weather. This immersive workshop focuses on the basics of Honey Garlic preparation, a combination of local garlic and local honey. Each participant will help process the ingredients and take home a pint jar of honey garlic, as well as a pre-made sample of honey garlic to enjoy while their batch infuses. A custom-blended herbal tea will also be available to sip on during the workshop.

Each participant will help process the individual ingredients and take home a quart jar of fire cider, as well as a pre-made sample of fire cider to enjoy while their batch infuses. Intro to Traditional Crafts: Felting Workshop

Join Bee's Knees 'n' Knits as they guide the Intro to Traditional Crafts: Felting Workshop on Saturday, October 21st, from 10am-11:30am at The Nook in Bigfork, Montana. The Intro to Traditional Crafts series is a collection of workshops with the intent to revive utilitarian arts and handicrafts using local materials and ingredients.

The upcoming Felting Workshop is an immersive experience in which participants learn the age old craft of needle-felting, an art form based on the repeated process of prodding a specially barbed felting needle into sheep wool until it felts into a sculpture. Bee's Knees 'n' Knits' shop owners, Kassie Roedel and Kyle Cumming, will teach the basics of needle-felting, offer one-on-one assistance, and provide examples of their felted works for inspiration.
